BLACK & WHITE COOKIES
Ingredients:-
125 g butter
30 g icing sugar
45 g castor sugar
Pinch of salt
½ tsp vanilla essence
195 g plain flour
½ tsp baking powder
10 g cocoa powder )
             1 tbsp milk ) mix together

1 egg white beaten
Method:-
  1. Cream butter, sfited icing and castor sugar, salt and vanilla essence until light and creamy. Stir in sifted flour ingredients with a metal spoon until well mixed. Divide dough into two equal portions. Leave one plain and mix in cocoa mixture into the other until well combined.
  2. Roll each of the dough separately in between two plastic sheets to a 17 x 24 cm rectangle. Refrigerate for 15 mins until firm. Brush surface of the plain rectangle with beaten egg white and place the chocolate rectangle on top of it.
  3. Roll up with the help of a plastic sheet into a tight Swiss-roll starting from the length side. Refrigerate of freeze until firm. Slice into ½ cm thick slices with a sharp knife and place on prepared trays.
  4. Bake @ 160°C for 15 mins.
