BLACK & WHITE COOKIES
Ingredients:-
125 g butter
30 g icing sugar
45 g castor sugar
Pinch of salt
½ tsp vanilla essence
195 g plain flour
½ tsp baking powder
10 g cocoa powder )
1
tbsp milk ) mix together
1 egg white beaten
Method:-
- Cream butter, sfited icing and castor sugar, salt and vanilla essence
until light and creamy. Stir in sifted flour ingredients with a metal spoon
until well mixed. Divide dough into two equal portions. Leave one plain
and mix in cocoa mixture into the other until well combined.
- Roll each of the dough separately in between two plastic sheets to
a 17 x 24 cm rectangle. Refrigerate for 15 mins until firm. Brush surface
of the plain rectangle with beaten egg white and place the chocolate rectangle
on top of it.
- Roll up with the help of a plastic sheet into a tight Swiss-roll starting
from the length side. Refrigerate of freeze until firm. Slice into ½
cm thick slices with a sharp knife and place on prepared trays.
- Bake @ 160°C for 15 mins.
