CHOCOLATE CHIP COOKIES
Ingredients:-
180 g butter
150 g castor sugar
180 g soft brown sugar
1 tsp vanilla essence 2 eggs, beaten
360 g self-raising flour
¼ tsp salt
220 g chocolate chips
Method:-
- Grease cookie trays or line with greased baking sheets.
- In an electric mixer, using the beater, cream butter, castor and brown
sugar and vanilla essence on medium speed for 3-4 mins. Add beaten egg,
half at a time, and continue beating until mixture is light and creamy.
This takes approximately 2-3 mins.
- Sifted flour and salt spoon to mixer on lowest speed for 10 seconds.
Add chocolate chips and mix well again on lowest speed for 10 seconds.
- Either drop tspfuls on to prepared baking sheets, well spaced apart,
for spread-out shape cookies or refrigerate mixture for 30 mins and lightly
form into larger than cherry-sized balls for rounder regular shape cookies.
- Bake in moderate oven for 15-20 mins.
