CHOCOLATE CHIP COOKIES

Ingredients:-

180 g butter
150 g castor sugar
180 g soft brown sugar
1 tsp vanilla essence 2 eggs, beaten
360 g self-raising flour
¼ tsp salt
220 g chocolate chips

Method:-

  1. Grease cookie trays or line with greased baking sheets.
  2. In an electric mixer, using the beater, cream butter, castor and brown sugar and vanilla essence on medium speed for 3-4 mins. Add beaten egg, half at a time, and continue beating until mixture is light and creamy. This takes approximately 2-3 mins.
  3. Sifted flour and salt spoon to mixer on lowest speed for 10 seconds. Add chocolate chips and mix well again on lowest speed for 10 seconds.
  4. Either drop tspfuls on to prepared baking sheets, well spaced apart, for spread-out shape cookies or refrigerate mixture for 30 mins and lightly form into larger than cherry-sized balls for rounder regular shape cookies.
  5. Bake in moderate oven for 15-20 mins.
