FRIED RICE NOODLES
Ingredients:-
680 g koay teow
455 g bean sprouts
225 g choy sum
225 g prawns
225 g cockles with shells
2 chinese waxed sausages
20 dried chillies
8 cloves garlic
8 tbsps cooking oil or lard
8 tbsps light soya sauce a little water for frying
6 eggs
1 bunch garlic chives
Method:-
- Blance noodles, drain and put aside.
- Nip roots of bean sprouts.
- Cut greens into lengths of 5 cm.
- Shell and devein prawns.
- Cockles are available shelled. Otherwise, use a coin to pry open shells
and pull out the cockles. Rinse.
- Slice thinly Chinese sausages.
- Prepare dried chillies. Grind or pound into fine paste.
- Pound garlic into a soft pulp.
- Heat oil and fry pounded garlic for a while. Add chilly paste, greens,
chinese sausages, prawns, bean sprouts in that order.
- Push all fried ingredients to one side and add noodles. Stir fry noodles
quickly adding light soya sauce. Sprinkle with a little water. Mix in thoroughly
all the fried ingredients.
- Spread noodles and ingredients around the pan to create an empty space
in the middle. Add a little more oil if necessary, and crack in eggs. Scramble
with spatula and bring noodles and ingredients to cover the eggs. Stir
evenly and quickly.
- Add cockles and stir for a few seconds only as cockles must not be
over-cooked.
