MINI GLUTINOUS RICE IN LOTUS LEAF
Ingredients:-
3 sheets lotus leaf
5 ozs glutinous rice
¼ chicken
1 oz dried shrimps
4 mushrooms
2 slices ginger
Seasoning:-
1 tsp light soy
¼ tsp sugar
½ tsp cornflour
1 tbsp water dash of sesame oil dash of pepper
Method:-
- Rinse lotus leaf in hot water and remove at once, wipe dry.
- Wash and soak glutinous rice in water for about 3 hours.
- Cut chicken into small pieces and marinate with seasoning. Shred ginger.
- Wash and drain dried shrimps. Soak and trim mushrooms, squeeze out
excess water.
- Spread out lotus leaf. Place it on 3 tbsps glutinous rice and top with
chicken pieces, dried shrimps, mushrooms and ginger shreds. Then cover
with glutinous rice. Wrap well and steam for about 45 mins. Serve.
