Ingredients:-

120 g margarine
120 g brown sugar
Pinch of salt
½ cup honey
1 egg yolk

250 g self-raising flour
¼ tsp bicarbonate of soda
½ tsp cinnamon

Almond flakes, to decorate

Method:-

1. Grease baking sheets and line cookie trays.
2. Cream margarine, brown sugar and salt until light and creamy.
3. Add egg and beat for 1 mins or until light and fluffy. Stir in sifted dry ingredients and beat on low speed for 20 seconds until well combined.
4. Drop tspfuls onto prepared trays and space 2 ½ cm apart to allow for spreading. Stick in two almond flakes in the centre.
5. Bake moderate oven for 20 mins.
