LAKSA LEMAH
Ingredients:-
½ litre water
1 tsp sugar, 1 tsp salt
455g prawns
225ml cooking oil
2 stalks serai, bruised
625g bean sprouts, boiled & drained
1 kg mee
8 cups of coconut milk (from 2 coconuts)
Ground Ingredients:-
1 piece thumb-size kunyit
10 pieces lengkuas, sliced
20 dried chillies
5 large red chillies
6 candlenuts
2 tbsps shrimp paste
165g shallots
1 tbsp ketumbar powder
Chilli Paste:-
55g dried chillies 2 tbsp cooking oil
7 red chillies 2
tbsp water 1 tsp.
Shrimp paste salt
and sugar for seasoning
Method:-
- Grind ingredients to a fine paste.
- Extract coconut milk from coconuts.
- Boil ½ litre water with 1 tsp salt and 1 tsp sugar.
- Add prawns and boil for not more than 10 mins.
- Remove prawns, shell and return shells to the boil.
- Boil for another 10 mins and strain liquid for stock.
- Heat cooking oil and fry paste with bruised serai till the aroma comes
through.
- Add coconut milk and prawn stock. Bring to boil.
- Simmer and stir gravy occasionally to prevent curdling.
- To make chilli paste, grind ingredients to a fine paste and fry in
hot oil till well done.
- Add water and stir-fry with salt and sugar.
- Remove to bowl.
Garnishings:-
Cooked prawns, shelled and sliced, fish cake & mint leaves.
