LAKSA LEMAH                                                                                                              

laksa lemakIngredients:-
½ litre water
1 tsp sugar, 1 tsp salt
455g prawns
225ml cooking oil
2 stalks serai, bruised
625g bean sprouts, boiled & drained
1 kg mee
8 cups of coconut milk (from 2 coconuts)
Ground Ingredients:-
1 piece thumb-size kunyit
10 pieces lengkuas, sliced
20 dried chillies
5 large red chillies
6 candlenuts
2 tbsps shrimp paste
165g shallots
1 tbsp ketumbar powder

Chilli Paste:-
55g dried chillies     2 tbsp cooking oil
7 red chillies           2 tbsp water 1 tsp.
Shrimp paste          salt and sugar for seasoning

Method:-
  1. Grind ingredients to a fine paste.
  2. Extract coconut milk from coconuts.
  3. Boil ½ litre water with 1 tsp salt and 1 tsp sugar.
  4. Add prawns and boil for not more than 10 mins.
  5. Remove prawns, shell and return shells to the boil.
  6. Boil for another 10 mins and strain liquid for stock.
  7. Heat cooking oil and fry paste with bruised serai till the aroma comes through.
  8. Add coconut milk and prawn stock. Bring to boil.
  9. Simmer and stir gravy occasionally to prevent curdling.
  10. To make chilli paste, grind ingredients to a fine paste and fry in hot oil till well done.
  11. Add water and stir-fry with salt and sugar.
  12. Remove to bowl.

Garnishings:-
Cooked prawns, shelled and sliced, fish cake & mint leaves.
